Twix Hi Hat Cupcakes
I have a very old friend of the family coming for dinner tonight - she's in town with her family from the US. She has been a great supporter of my cupcakes, albeit virtually, so I wanted to bake something special to mark the event.
Her daughter wanted all chocolate cupcakes but she vetoed the double chocolate so I decided to try out Hi Hats. These are a Twix variety of my own invention - a caramel swirled vanilla cake with golden biscuit morsels and chocolate chunks. Topped with a Caramel Swiss Meringue Buttercream (I am not a SMBC fan but have been tinkering with a recipe for some time now and am quite won over by this one!). I just love how you can see the swirl here from the inside.
