Le Murier Cupcake
Most French bakeries sell a pastry call Un Fraisier. It is a creme mouselline sandwiched between two layers of genoise cake, topped with marzipan and usually a decorative strawberry or two. The pastry is usually wrapped in a thin film of cellophane through which you can see strawberries protruding from the mousseline.
I was going to try to do a Fraisier cupcake but came across these beautiful blackberries and then took some creative license with the whole thing.
Le Murier cupcake (blackberry in French = mure) is a blackberry studded vanilla cupcake, sliced in half; lemon curd and fresh blackberries have been spread in the middle. It is topped with a cream cheese frosting, a marzipan cap, sugared lemon slices and a blackberry. Summer never tasted this good!
