    A knife is a chef's most precious and important tool, we use it for everything, we abuse it and we take care of it
    I remember the first knife i got from the restaurant, it wasn't especially good, but i treasured it, took good care of it and cared for it, because it became so quickly dull, at time went i bought my own knife and it was a much higher quality, and that knife i where a lot more rough with, didn't matter because i knew that because it was a better quality it could withstand the abuse
