"The Pumpkin is always oranger on the other side of the patch" ~ Monday Munchies ~

I made Pumpkin Bars and they were ..... mmmm doggie good :)

 

I don't like coconut but my hubby does, so I sprinkled it on half :)

  

Recipe:

 

2 cups Bisquick baking mix

2/3 cup sugar

1 1/2 teaspoon ground cinnamon

1 teaspoon nutmeg

1 tablespoon vanilla extract

1/2 teaspoon almond extract

3 eggs

1 can pumpkin (16 ounce)

 

Frosting:

1 cup powdered sugar

1 tablespoon plus 2 teaspoon milk

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

flaked coconut

 

Heat oven to 325 degrees.

Grease 13x9x2" rectangular pan.

Mix all ingredients except frosting; beat 40 stokes.

Spread in pan.

 

Bake until wooden pick inserted in center comes out clean, 20-25 minutes; cool completely.

 

Spread frosting over top.

Cut into bars, about 2x1".

Makes 75 bars..... or cut like a square piece of cake :)
