Spinach and Broccoli Quiche ~

 

Served in a ceramic bowl I made back in 1983.

Bisquick is a pre-mixed baking product made by General Mills consisting of flour, shortening, salt, and baking powder (a leavening agent). According to General Mills, Bisquick was born when one of their sales executives met a train dining car chef in 1930 who mixed lard and the dry ingredients for biscuits ahead of time. The recipe was adapted, using hydrogenated oil, thus eliminating the need for refrigeration. Originally intended for making biscuits very quickly, Bisquick can be used to make a wide variety of baked goods from pizza dough to pancakes to dumplings to snickerdoodle cookies.

 

Substitution: 1 cup mix = 1 cup flour, 1 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1 tablespoon oil or melted butter. Bisquick is currently sold under the Betty Crocker brand name by General Mills.

 

Bisquick is sold under the regular recipe and "Heart Smart" without cholesterol.

 

Recipe:

 

1 package (10 ounces) frozen spinach, thawed and drained

1 package (10 ounces) frozen broccoli, thawed and drained

3 cups shredded Cheddar cheese - ( 12 ounces) divided - *today I used Mozzarella for 1 1/2 cups)

2/3 cup chopped onion

1 1/3 cups milk

3 eggs

3/4 cup Bisquick baking mix

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon garlic powder

1/4 teaspoon California Herb (basil, marjoram,dill weed, thyme, oregano,parsley)

 

Heat oven to 400.

Grease deep pie plate, 10 x 1 1/2 inches.

Mix spinach and broccoli and 1 1/2 cups of the cheese, and onion in the plate.

Beat milk, eggs Bisquick, salt and pepper, garlic and California Herb mixture, until smooth, 15 seconds in blender on high or 1 minute with a hand mixer.

Pour into pie plate.

Top with remaining 1 1/2 cups cheese.

Bake until knife inserted in center comes out clean, 35-40 minutes.

Cool 5 minutes.

Yield: 6-8 servings.
