Cloudy out today so seemed like it was time to bake some cookies...

 

"Peanut Butter Cookies"

 

2/3 cup peanut butter, crunchy style

1/3 cup shortening

1/2 cup sugar

1/2 cup honey

1 egg

2 1/2 cups Bisquick baking mix

 

Mix peanut butter, shortening, sugar, honey and egg.

Stir in baking mix.

Cover and refrigerate for an hour.

Heat oven to 400 degrees.

Spray cookie sheets with a cooking spray (to avoid sticking)

Roll teaspoon of dough into a ball and place on cookie sheet, leaving room between each one.

Take a fork and press down on each cookie. Go back and press the fork to make a criss cross design.

Bake until light brown, about 8 minutes.

Yield: 46 cookies (recipe said 6 dozen, but I don't like dinky ones, so I make them larger...lol)

Why are peanut butter cookies traditionally marked with a criss cross pattern?

 

The Peanut Butter Balls recipe in the 1931 edition of Pillsbury's Balanced Recipes contains the first known written instance of instructing the cook to press the cookies using fork tines. The recipe does not explain why this advice is given, though: peanut butter cookie dough is dense, and without being pressed, it will not cook evenly. Using fork tines to press the dough is a convenience.
