I made this Banana-Date Loaf Bread today ( cream cheese is good on this). This is on a ceramic pickle dish I made in 1980 :) ~
Recipe:
Pour 1/2 cup boiling water over 8 ounces pitted dates, cut up (1 1/2 cups), and 2 tablespoons shortening: cool to room temperature. Add 1/2 cup crushed pineapple. Stir in 1 beaten egg. Sift together 2 cups sifted all-purpose flour, 1/3 cup sugar, 1 teaspoon baking powder, 1 teaspoon baking soda and 1/2 teaspoon salt; add to mixture; just until mixed.
Stir in 2 ripe, mashed bananas.
Spray Pam (grease) on loaf pan 9x5x3 inch. Bake at 325 degrees for an hour.
You could also pour batter into 4 greased mini pans, 4 1/2 x 2 3/4 x 2 inch and bake at 325 for 40 to 45 minutes.
