** Hand painted china plate that my Grandma painted back in 1902 **

 

Recipe:

 

2 cups Bisquick baking mix

1 1/2 cups lighly packed shredded carrots

3/4 cup sugar

1/4 all-purpose flour

1/4 canola oil

2 tsps. ground cinnomon

1 tsp. ground netmeg

1 tsp. vanilla

3 eggs

1/2 cups crushed pineapple

 

Heat oven to 350. Grease bottom only of loaf pan, 9x5x3". In this case, I used an 8x6x3 pan along with a mini-loaf pan as I was making the bread for a neighbor and kept the mini loaf to have for this photo!

Mix all ingredients in a bowl; beat vigorously 30 seconds. Pour into pan. Bake until toothpick inserted into center comes out clean, 50 minutes for the mini loaf and additional 5 minutes for the larger loaf pan.

Cool 10 minutes; loosen sides of loaf with knife or metal spatula.

Remove from pan.
