Farm Share Dinner: Risotto and Salad
I used a little bit of everything from this week's share in tonight's dinner.
Risotto with broccoli rabe and spinach
I used Jamie Oliver's fantastic basic risotto recipe. After Stage 4, I folded in the broccoli rabe and spinach, and let it sit for about 10 minutes to wilt. What a great way to use these greens! Risotto is refrigerator velcro - you can toss in anything you have on hand.
My Favorite Salad
All of this week's lettuces were laid down and sprinkled with crumbled gorgonzola, dried cranberries and candied pecans, and drizzled with roasted walnut oil and aged balsamic vinegar. This is the best salad in the world, and took less than 5 minutes to assemble.
