Praline Cake

I found a flat of these gorgeous boysenberries at the market. I knew I had to make something special with them. I found this fabulous bakery in San Diego online: and tried to replicate their cake. I made a 3 layer chocolate cake with homemade boysenberry preserves, a layer of Michel Cluizel bittersweet chocolate mousse, and hazelnut buttercream. I covered the cake in a hazelnut praline and topped it with a Michel Cluizel chocolate ganache, fresh boysenberries, and fresh flowers. Whew! It was a lot of work, but the end result was fantastic. If I am ever in San Diego I would love to pay Extraordinary Desserts a visit...everything there looks incredible!
