these red beauties are chioggia beets, which are the red and white striped variety. so gorgeous when you cut into them. we ate them roasted with feta and walnuts and drizzled with raspberry vinaigrette--oh... i wish there were leftovers but between the two of us (cuz the kids just don't get beets yet), we ate them all. beets are the most under appreciated veggie.
