sourdough, finally

so i finally made the sourdough from the starter i made last week. the true critics (the family dinner table) has yet to voice their opinions, but i think it is too sour and the texture is off. i am thinking the too sour part is a starter issue... or maybe just the sour mood i was in today :) the texture, i don't know. i think it might just be the ww/white combo. it seems like sourdough bread should be all white.
anyway, on another note, does anyone have any good gluten-free bread recipes? do they even exist?
