Making an Egg Cream

This is an egg cream in the making. It's chocolate milk with seltzer, but for a good egg cream, you must have fountain seltzer or seltzer from a seltzer bottle, something that vanished years ago. The extra carbonation and the force with which the seltzer is added make a big difference. Ah, well, it was the Egg Cream and Egg Roll festival.

 

This is only an approximation of a real egg cream. I remember the old days and the real egg creams.
