Garlic Scapes
I did not know of these until we signed on to a vegetable subscription program. In the spring a garlic bulb will send up a flowers stalk or "scape". Cutting the stalk off forces the plant to put more of it's energy into growing the bulb. That stalk, however, can be minced and used as one would use garlic. As they get older the bottom gets woodier, but bud remains tender.
