Mochiko fig pancakes (gluten free)
Extra chewy mochi pancakes made with sweet glutinous rice flour. Recipe adapted from cookpad
100g sweet rice flour
4 g baking powder
1 tbs vegetable oil
1 tsp vanilla extract
1. Whisk together dry ingredient in a bowl, and whisk together wet ingredients separately in a small bowl.
2. Add wet to dry ingredients and whisk until blended.
3. Fry over a nonstick greased pan in 1/4 cupfuls until browned on both sides
