Breadmaking #6: Kneading
Put some flour between your hands and rub them together, letting the flour fall on an area on the table. Do this a few times so there's a flour-covered area, then toss the bread dough on it. Knead the dough there for ten minutes - just keep pounding it down, folding it together, pounding it down again. You can hold it in your hands and squeeze it, too, but keep it up with some vigor for ten minutes.
