Chicken and Stuffing Cassserol with Lima Beans

    2 chicken thighs.
    1 1/3 cup stuffing mix.
    2/3 can Cream of chicken soup.
    1/3 cup sour cream.
    3 Table. Chopped onion.
    1/2 Stalk celery Chopped.
    Salt and pepper to taste.

    Sauté the celery and onion until tender, mix with the soup, sour cream and stuffing
    Place two chicken pieces in bottom of casserole dish. Put Stuffing mix on top then
    Sprinkle with 1 tablespoon dry stuffing and bake at 400 degrees for 35 minutes.

    Put 1 cup of Lima Beans in sauce pan and mix the left over soup with equal amounts of
    Water and cook on top of stove while chicken and stuffing cooks. Watch and add milk if the
    Liquid cooks to low.

    Serves two. Or one with a great freezer dinner for work next week.
