      We love these cinnamon rolls and give pans of these to neighbors and friends at Christmas; everyone loves them. I love the large quantity the recipe makes and the dough is incredibly tender. There just isn't any reason to buy store bought after you've tried these. That said, we've made some minor changes to the basic recipe: 1. We spray the baking tins with non-stick cooking spray instead of coating them with melted butter. We don't miss or need the extra butter--the recipe is butter rich to begin with--and the cinnamon flavor is clearer. 2. We spread the dough with softened butter instead of the melted butter the recipe calls for. Again, it's fast, easy, and a lot less messy as the butter doesn't squeeze out of the long roll of dough as you are rolling or cutting. The maple/coffee flavored glaze is perfect and we also use a high quality cinnamon from Penzey's because these are, after all, Cinnamon Rolls!
