Pontack Elderberry Sauce

one last time, i keep saying. i found an excellent elderberry vinegar recipe, called Pontack when i was surfing around for wild game recipes. hank is writing a wild game/duck cook-instructable book at the moment. i modified it of course and add cardamom, cinnamon and other spices to the cloves, nutmeg and all-spice called for in the recipe. i also used onions instead of shallots.


the recipe was perfect because i dont want to do sugar or jam or confiture. i had just been bottling last years apple cider vinegar so i had jars of it all over the counter. after dropping the kid off at school, i walked home the long way and found my favorite elderberry tree laden with elderberries and started to pick giant handfuls. then it struck me that i had forgotten amaya's afternoon snack for school. i didnt want to walk all the way home and didnt have time anyways (we walk four times each way back and forth everyday) so i foraged some figs and some bright orange may pops (passion fruit vine) and ran back to school just as the gate was closing and gave the principle the produce and said this is amaya's snack. she smiled and said ok, i'll give it to her. then i realized that i had smashed elderberries all down the front of my shirt and bits of leaves in my hair and probably a spider or two in there. my hands were bright purple!
