gnocchi with sage butter

homemade gnocchi. part of my simple recipes from almost nothing. (foraged pine nuts, sage and potatoes--more on that later)


2 potatoes boiled, and then peeled while hot. put thru a ricer and then sprinkled with a cup of flour, made a well in the center add an egg and some salt. stirred with a fork until it formed a ball. gently kneaded it for four minutes with floured hands. rolled into 1 inch snakes and cut off inch chunks and tossed into boiling salted water. when they float to the top they are done.


melted demi-sel butter, added garlic and sage, sauted until golden about four minutes on medium and then tossed into gnocchi. i topped with foraged pine nuts but that is optional
