Chicken & Sage Agnolotti with Poached Eggs and Sauce

The sauce is shallot, garlic, sage, sweated in olive oil, then chicken stock and white wine, a little flour whisked in.

 

The poached eggs provide their own sauce, too, and the richness of the yolks is amazing.
