Pannkakor (Swedish Pancake) - Ready to Eat
Recipe - Pannkakor (aka Swedish Pancakes)
1 cup of flour
2 cups of milk
2 eggs
3 tablespoons of veg oil
1 tablespoon of sugar
1/2 teaspoon of salt
1/2 teaspoon of nutmeg
mix all in a blender for a few minutes, pour onto a griddle. watch the heat - it's the most difficult part of making them. on my gas range, the "sweet spot" is somewhere between medium and medium-high. when you have the pan temperature correct, they go really fast 2-3 minutes on the first side, even less on the second.
serve warm with a hot fruit compote, or butter and powdered sugar. please no maple syrup - if you must, then skip this recipe, grab a box of aunt jemima, and save yourself some time.
