      I tend not to eat fish that is endangered, nor do I enjoy seafood that is farmed when its food intake to product radio exceeds 2:1. It's difficult, as I love shrimp.

      Marlin is to the best of my knowledge, a fish that generally caught for sport purposes. I've never seen it on a restaurant menu before. It's very dense, meaty and rich, similar to swordfish and I poached this in the oven for 10mins on each side, to medium rare. I imagine it'd be delicious over a grill.

      oh yeah! flame grill would be good, but, this looks delish already. For a second, i thought you took this photo at a restaurant (which I'm going to start doing). Nice plating and lighting.
