My mouth waters every time I think back to this delicious shrimp scampi and rice plate from Giovanni's Shrimp Truck in the small town of Kahuku on the island of Oahu. There is a ton of garlic in this dish, but mmmmm.... it's worth it. The shrimp is fresh as can be, as there are several shrimp farms within a stone's throw of the area's many shrimp trucks and roadside stands.
