I made a fancy dinner of Chicken a l'Orange last night. I know it is supposed to be made of duck, but there weren't any fresh whole ducks I could find, so I got a chicken.

 

I combined a few different recipies I found. The chicken was stuffed with sherry-soaked apples and scallions with thyme and wrapped in bacon with some paprika and red pepper and honey added inside and out. The sauce was made of orange juice concentrate with sherry and the giblets. It was served with a side salad and rice pilaf. It was delicious.
