thumbprints before the oven
I never made thumbprints before, but I had the ingredients, so I went for it. These are sooooo good.
Recipe:
Cookie dough:
* 3/4 pound (3 sticks) unsalted butter, at room temperature
* 1 cup sugar
* 1 teaspoon pure vanilla extract
* 3 1/2 cups all-purpose flour
* 1/4 teaspoon kosher salt
Egg Wash:
* 1 egg beaten with 1 tablespoon water, for egg wash
Topping/Filling:
* 7 ounces sweetened flaked coconut
* jam (i used Raspberry)
-preheat the oven to 350.
-cream together butter and sugar.
-add in vanilla
-mix in flour and salt until dough comes together.
-put dough on floured surface, roll into flat disc & refrigerate for at least 30 minutes
-Roll the dough into small bals
-Dip each ball into the egg wash and then roll it in coconut.
-Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop jam into each indentation
-Bake for 20-25 minutes
tip: don't touch the jam when it comes out of the oven. it's like lava. related: i have a blister.
p.s. i forgot to take a picture of the finished cookies. oh well, I'll have to make them again.
