PRAISE THE MAIZE

 

Classic American Pilsner (Pre-Prohibition style, that is, a higher bitterness level than American Pilsners from WWII onward, and with corn, just not as high a percentage as latter day recipes).

The name of the beer inspired by a 1997 interview about the use of corn in beer.

Starting Gravity: 1.056 (2/26/12) 48º F

Secondary Gravity: 1.014 (3/11/12)

Final Gravity: 1.014 (4/15/12) º F (35 Days)

5.6% alcohol (by volume)

Apparent Attenuation: 74.1%

Real Attenuation: 60.7%

 

Mash (85 minutes ~148º)

8.00 lbs American 2-row

4 lbs Corn Maize

 

Boil (65 minutes)

1.8 oz. Czech Saaz Pellets 4.0% AA (60 min.)

1.0 oz. Czech Saaz Pellets 3.0% AA (20 min.)

1.0 oz. Czech Saaz Pellets 3.0% AA (10 min.)

1.0 oz. Czech Saaz Pellets 3.0% AA (5 min.)

1.0 oz. Czech Saaz Pellets 3.0% AA (0 min.)

 

1 tablet Whirlfloc (Boil – 15 min.)

½ tsp Brewer’s Choice Wyeast Nutrient Blend (Boil – 10 min.)

 

Primary (48º F)

2 vials of White Labs WLP800 Pilsner Lager Yeast

(1600 ml Starter started the day before)

 

7.5 gallons @ 1.049 pre-boil
