Chocolate Brownie Cupcakes I
March 7th 2007 made Explore #267.
This weekend's cupcakes: pure, unadulterated (although adorned), sinful, simple, chocolate. J and I planned to have a Star Wars movie marathon weekend. I had visions of marzipan storm troopers, sparkly ganache galaxies (a la cupcaketastic), and all manner of other lovely geeky things to adorn cupcakes with. Star Wars weekend has been put on hold (for at least two weeks, since next is Irish celebration weekend) but I made cupcakes anyway. He wanted chocolate brownie cupcakes, from the 500 Cupcakes book I picked up last time while visiting him. This book is fantastic by the way... this will be the second recipe I've made from it, and all the base recipes and variations in it really give me something to look forward to for future bakings.
Like all recipes, I had to adapt this one to my own tastes (always adding, always tweaking!). Half are made with walnuts, half without. Of *course* I put a nice extra heaping of melted chocolate into them... a little extra chocolate never did a brownie anything but good. And just because I like it, I added in half a teaspoon of vanilla butter nut flavored coffee granules (yes whole granules) for a teensy bit of extra punch, and to bring out the chocolate flavor more. All are topped with a rich, delightful, smooth chocolate buttercream, and either dragees or chocolate chips, to separate the nutty ones from the normal ones.
The buttercream isn't quite the consistency I'd like but it still turned out tasting pretty good. I ran out of confectioner's sugar and was rushing to get the frosting onto the still-slightly-warm cupcakes to get some photos before all the natural light fades, so it melted and drooped a bit. So if the frosting looks like the Blob threatening to flow off one cupcake and eat all the others... that's why.
You'll probably be seeing a lot of cupcakes photographed in these silver wrappers in my photostream. They're ultra shiny, they're unpatterened so they can be used for anything, and I just love silver. ^_^
