Long Eggplant (ma khuea yao) มะเขือยาว

Solanum melongeana, Long Eggplant.

It is a small bush with cylindrical, slightly curved fruit. The skin is smooth and shiny. It comes in several colors including green, purple and purplish-black, depending on the variety. Long eggplant is often eaten as a fresh vegetable, fried in oil, fried in egg yolk, added to spicy salads and soups or roasted and skinned then eaten with nam phrik. When cooked, it is the sweetest of all eggplant. When heated, the flesh becomes very soft.
