Summary
These are low fat and are delicious served with honey or marmalade for breakfast
Ingredients
9 oz plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 egg, beaten
5 tablespoons water
3 oz soft brown sugar
3 medium well ripened bananas, peeled and mashed to a puree
4 tablespoons corn oil
Method
Preheat oven to Gas mark5,190C,375F
Put 12 paper cases in suitable muffin tins
Sift together flour,baking soda, bicarb and salt.
In another bowl, beat together the egg,water,sugar and bananas
Ad the corn oil to the wet ingredients and stir well.
Quickly combine the two sets of ingredients and mix just enough to combine - you should have a lumpy consistency.
Spoon the mixture into the paper cases and bake for 20-25 minutes until firm and springy.
Cool on a rack
