blue corn muffin with blueberries

This is the only recipe that came out good on the first try! I've tweaked the recipe the tiniest bit more and I suspect it will be even better. This is my first time using blue corn and I'm slightly disappointed that it didn't make the dough very blue at all. They are golden with blue flecks and blue blobs (the berries). This recipe makes 12 muffins.

 

1 cup blue cornmeal

1 cup whole wheat flour for pastry

1 1/2 cups fresh blueberries

1/4-1/2 cup agave nectar depending on how sweet you like your muffins

1 tbsp. baking powder

1/8 tsp. salt (I used just a pinch and then realized it needed more)

2 eggs

1 cup buttermilk

1 tsp. vanilla

1/4 cup apple sauce

2 tbsp. canola oil

zest and juice of one lemon (I used a meyer lemon and it was very tasty)

 

bake at 375 degrees for 20-25 min.

 

These muffins are nice and summery! Please let me know if you make these and what you think. I'm open to suggestions too.
