P9240008G-Slow-cooked Pork Roast

This is a very loose "recipe"! Heat olive oil in a pan. Go to your cupboard and take out any herb or spice that might go well with pork. Add the herbs and spices to the heating oil. Brown the roast on all sides for 1 minute a side. Remove the roast. Drain off the oil, leaving the spices in the pan. Deglaze the pan with white wine or cognac. Add more wine (I boil off the alcohol) and several cups of beef broth. Add more spices as desired (I am not very precise about this!). Bring to a boil and then reduce the heat to a low setting. Cover and simmer for 3-4 hours, checking and basting it during the cooking. When eating it, the pork tastes best when soaked in the sauce.
