Soba!
Cold Japanese soba noodles (traditionally served cold in summer), topped with a roasted carrot and beet salad, and grilled chicken tossed in a light dressing (of rice vinegar, thai chili paste, Sriracha chili sauce, and a few drops of light soy sauce). Garnished with some toasted sesame seeds and scallion.
Soba noodles, made from buckwheat (which is not a wheat [grass] at all, but derived from "kasha") are very different from a typical wheat noodle, and are nothing like traditional pasta in taste, usage, and preparation.
