Zucchini Torte
Having brought back a lot of zucchini from Essex County, I dove into my cookbook collection to find a new use. Enter this dish from a Mexican cookbook. I accidentally used too much self-rising flour (tried to dilute it with extra egg rather than start over) but the result tasted fine. Ingredients included jack cheese, green and yellow zucchini, chipotle powder, onions and fresh jalapenos. August 17, 2008
