Pasta With Roasted Mushrooms, Eggplant & Olives
What a lovely, beautiful dish! The recipe comes from the August 2011 of delicious. magazine. Casarecce pasta is accompanied by roasted portobello mushrooms, baby eggplants, kalamata olives and garlic, then dressed with a lemon-olive oil dressing and scattered with soft goat's cheese and fresh basil.
