Lycopene Delivery System, chickpea variation

Vegan sauce to be eaten with whole wheat pasta.

 

1 chopped large onion

2 chopped green bell peppers

1 chopped eggplant

4 cups cooked chickpeas

2 cans whole tomatoes pureed.

 

Saute the onions in olive oil with sea salt, garlic, thyme,black pepper, cayenne pepper, fennel seed, rosemary, savory winter leaf, coriander, dill weed, oregano, peppermint, ginger, & bay leaf (or just use something called 365 Mediterranean Seafood Seasoning). Add eggplant & peppers when onions are transparent. Puree the whole tomatoes and add. Let simmer. When peppers are cooked, add cooked chickpeas.
