baked pasta with daiya cheese and a portuguese loaf

Wonderful dish. Easy to make. I used garden spiral pasta here but you can use ziti or botie as well. The sauce is canned and to that you just add some of your fav veggies and soy crumbles. Here I went with mushrooms, olives and peppers. The trick is to insert 1/2x1/2 in cubes of daiya in the middle of the dish so that they kind of explode in the middle and make it cheesy. Also, make sure the noodles are completely cooked so that they don't steal the moisture out of the sauce; nothing worse than a dry baked pasta dish! 400 degrees for about an 45 gives you a wonderfully creamy dish. You can also inset meatballs (vegan) in the middle for another surprise.
