roasted fingerling potatoes with a boca chikn sandwich

I love to roast fingerling potatoes. You don't have to cut them even! Just toss them in some olive oil and spices of your choice. I use salt, pepper and various "italian" spices. Preheat the oven to 425 and roast them for 35-45. You will know they are done when you can fork them with no resistance. The sandwich is boca chicken, fried!
