Baudelot cooler

An old Baudelot cooler on display at Brouwerij Het Anker, in Mechelen, which was in use at the brewery until the 1950s.

A Baudelot cooler is used to cool a liquid, in this case wort, by alowing the liquid to run down the outside of the copper while sending very cool liquid (~1 C) through the insides of the pipes. In this manner a simple but efficient heat exchanger could be employed to quickly cool the hot wort from around 70 C to 24 C, at which point the wort could be transferred to a fermentation tank.
