almond crusted chicken

i based this dish off a recipe in bon appetit.

 

i mixed honey mustard, mayo, chopped mint, salt, and pepper, and dipped the chicken in this mixture. then i dipped the chicken in an almond, bread crumb, salt, and pepper mixture. i cooked in a pan for 4 minutes on each side in butter and peanut oil, then baked for 15 minutes. i placed the chicken on a bed of mixed greens.

 

for the raspberry sauce side, i pureed raspberries, mixed them with white wine vinegar, sugar, and peanut oil. blended.
