Buckling
Buckling: a form of hot-smoked herring. Bought at Bristol's Slow Food Market yesterday and eaten for my lunch today. The only other place I've ever seen them for sale was in a kosher fishmonger in Stamford Hill, London. The word is probably from the German "Bückling" or the Swedish "Böckling", but both of those denote the kipper.
