Roasted Green Beans with Greek Dressing
1 lb. green beans w/ends snapped off
1/2 cup coarsely chopped walnuts
Salt, pepper and olive oil
Vinaigrette:
1/4 cup red wine vinegar
1 tbsp. lemon juice
2 tsp. sugar
1/2 tsp. dried oregano
1 tsp. pressed garlic
1/4 cup olive oil
1/2 cup thinly sliced red onion
2-3 tbsp. feta cheese crumbles
Salt and pepper
Preheat oven to 450 degrees Fahrenheit. Place beans and walnuts on a baking sheet and drizzle and sprinkle with salt and pepper. Toss lightly. Roast for 10-15 minutes, stirring occasionally.
Make vinaigrette by combining vinegar, lemon juice, sugar, oregano, garlic, salt and pepper in a large bowl. Drizzle in oil and add sliced onion. Remove beans and walnuts from oven, toss with dressing and transfer to serving plate(s). Garnish with feta cheese.
