Witlof salad

Shredded witlof/endive, granny smith apple (julienne) , roasted pine nuts, spring onion (julienne) and slices of grilled chicken-breast which I smoked, then grilled with salt, pepper and a tiny bit of currypowder (kerrie djawa).

Mix the endive first with a dressing of Greek yogurt with mayo, lemon juice, pepper, salt and some chopped coriander. Then add the other ingredients.

 

I think it lacked a sweet touch. Maybe raisins or grapes. Instead of the pinenuts. And maybe some honey in the dressing. It wasn't bad, but just a bit boring. And next time I won't use the curry-powder. Maybe use a french provincial herb-mix for the chicken.
