Bucatini all' Amatriciana

Recipe for Bucatini all' Amatriciana

 

1 T olive oil

150g pancetta / streaky bacon / ontbijtspek

1 small onion, chopped finely

2 cloves of garlic, chopped finely

4 T chili flakes

1 can (400g) canned tomatoes

2 T flatleaf parsley

Parmesan

 

Pasta

 

Panfry the pancetta cubes until golden brown and crispy-ish.

Add the onion, panfry on gentle heat for about 6 minutes.

Add the garlic and chiliflakes, panfry for 20 seconds.

Add the tomatoes, pepper and salt.

 

Simmer gently for about 15 minutes.

Mix with cooked pasta and parsley.

Add grated parmesan.

 

Served with grilled tuna (4 x 30 seconds) and grilled tomatoes (parsley, garlic, olive oil, pepper and salt on top, but it wasn't that good, that tomato)

According to wikipedia this recipe isn't very traditional. So maybe I should change the name into "pasta with bacon-garlic-chili-tomato sauce".
