Lonny's Babi Kecap

Be celeng base manis

 

Strifry until golden:

7 red shallots, chopped

3 cloves of garlic, chopped

 

Add and stirfry for about 2 minutes:

2 T ginger, chopped

400g pork, cut into 2-cm cubes

 

Add stirfry voor another minute:

4 T kecap manis (sweet indonesian soysauce)

2 T kecap asin (or kikoman)

 

Finally add

3 red chillies, chopped

3 green chillies, chopped

1 t freshly ground black pepper

 

And let it simmer until soft and tender, depending on the kind of pork you use. I used "hamlappen" and let it simmer for about 1,5 hour. Add water if needed. (I think it's needed)

In the end I transferred the sauce to another pan to reduce it on high heat. I like the sauce thick and sticky.
