Jamie's Pasta Carbonara with Courgette (and chicken)

Tagliatelle Carbonara with Courgette & Chicken

 

I used Jamie Oliver’s recipe for Courgette Carbonara and adjusted it a little. So this is what I did:

 

Mix together and set aside:

3 egg yolks

50 gr parmesan, grated

100 ml cream

salt/pepper

 

Panfry until golden and crispy:

100 gr smoked bacon

Then add

400 gr light green courgettes (cut in cubes)

2 t coarse ground black pepper

1 T thyme

And panfry until golden brown and soft.

 

In another baking pan, panfry:

200 gr chicken breast

Season with salt and another pinch of coarse ground black pepper.

Add to the pan with the bacon & courgette.

 

In the meantime, cook and drain:

250 gr fresh tagliatelle

But don’t forget to take 1 cup of cooking liquid before you drain.

 

After you drain the pasta, add it to the courgette/bacon/chicken-mixture.

Take it off the heat. Add a litte cooking liquid and the eggyolk/parmesan/cream-mixture.

Quickly mix it together. Add a little more cooking liquid if needed. Sprinkle with the rest of the parmesan and serve immediately.
