Thai Salad with Shrimp & Scallops

1. Soak some glass noodles for 30 minutes in hot water. Then drain and set aside.

2. Grill (or boil) some shrimp and scallops (or other seafood) and set aside.

3. Make a dressing of

=> 1 lemongrass, chopped very, very finely

=> 2 shallots, chopped finely

=> 2 T fishsauce

=> juice of 1 big lime

=> 2 red chiles, chopped very, very finely

=> 1 t sugar

=> 2 T chopped coriander

=> 1 T chopped mint

4. Mix everything together with cucumber, red sweet pepper and green mango or papaya. Sprinkle with 2 chopped spring onions.
