Goa Bean Salad
175g goa beans
100g cooked chicken, shredded
3 T fried shallots
55g roasted peanuts
125ml coconutmilk.
1 stalk lemongrass, really finely chopped
2 T dried shrimp, finely chopped
1,5 T fishsauce
3 T limejuice (or maybe less)
½ fresh red chilipepper, chopped finely
Prepare the dressing by mmixing the really finely chopped lemongras, shrimps, fishsauce, limejuice and red chiles together in a salad bowl.
Cut the goa-beans in an angle in 1cm pieces.
Blanche for 20 seconds in boiling water.
Drain, rinse and soak in cold water for a minute or two.
Mix the beans with the dressing in de bowl and half of the peanuts.
Garnish with the rest of the peanuts and the fried shallots.
Then drizzle the coconutmilk over the salad and serve.
I really liked this salad. Although you don't taste much of the winged beans anymore with all the strong flavours in the dressing, it's remarkably well balanced. Those Thai really know how to make great food. Yum!
