Duckbreast with onioncompote, broad beans and baby potatoes

I smoked the duckbreast for about 8 minutes, then panfried (6 minutes skinside down, 3 minutes skinside up). The onion compote I made ages ago and comes from the fridge.

 

Slowcooked baked common beans with garlic

 

600 gr common beans

3 T olive oil

3 cloves of garlic

2 T red wine vinegar

salt & freshly grounded pepper

 

Wash, dry and cut the beans into big chunks.

Heat olive oil in your frying pan and bake on a high heat for about 10 minutes. Keep stirring and flipping them around. Some pieces need to get really dark and caramelized.

Lower the heat and simmer with lid on for about 10 minutes.

Stir occasionally. When it gets too dry, add a drop of water.

Add the garlic and red wine vinegar. Simmer for another 10 minutes.

Taste and adjust vinegar/salt/pepper to your liking.
