Quail
I bought these to try one of Fuchsia Dunlop's recipes for smoked duck. In the end you deepfry the duck and I think that's a bit scary to do with a 2KG bird. So I decided to begin with quails. So much easier to handle. ;-)
Long story, but I didn't get to that recipe. Instead I tried something much simpler, just stuff them with oysters, lemon and butter. Cover with bacon and roast in the oven. (see next photos)
